I cooked it to medium.

Got a nice sear on both sides with melted butter on top.

I nixed the shrimp(s) until tomorrow. Picked up some ribeyes and Jersey corn. Goes better with the bourbon.

We are doing chimichurri fajitas. Kind of odd recipe i came up with a few months ago that turned out delicious. Grill up some skirt steak with chimi and serve it in strips with sauteed onions and peppers on tortillas with monetary jack. Boom!
