Arguments over burnt filets, mayo, pickles is not Ed Reed of cooks caliber...lol.
F- Bobby Flay.....Anytime (which was seldom) that a diner ordered an expensive Filet (whether it was a Petite/ladys Cut 10ozs...or a King/Man cut 16ozs) the waiter/waitress would ask if it would be okay to butterfly the Filet....so the cooking time would match the other steaks that were ordered Medium rare/rare).....if the diner said they'd rather not butterfly it, then the second the order came in, the broiler man would immediately fire the Well done Filet, so the timing would match the other tables orders.....A Well done 16oz Filet would take a good 15-17mins....in comparison to 8mins for a medium rare.

I had a former business partner whose wife always ordered her filet mignon well done and refused to butterfly the steak, The good chefs would do exactly what you just suggested. The ****** ones would ***** up everyone else's steak so she could eat an old shoe. Got to the point that I refused to go to steakhouses with them.

one of my friends was a waiter back in the day, and had a customer order their steak well done. he asked the customer "would you like me to butterfly the steak?" and the customer replied "yes after it's finished cooking"
