My parents spend half the year in Charleston and I’m there right now. Food is incredible here especially the shrimp and grits
My condolences, bud....My 93 old father-in-law passed away this morning. Not Covid-19 related. He'd been in a nursing home for 2 weeks and the hospital 2 weeks prior. None of us had seen him for 3 weeks - including my mother-in-law - due to them being on lock down. It was a blessing and a curse for my mother-in-law. She had to stay home and rest but worried constantly.
The main reason I'm sharing this is to shed some light on just another way this **** virus affects us in many unseen ways.
Keep your chins up my friends! This too shall pass.

Almost like being in prison...- Wake up at 6AM, walk my dogs, go run/get my cardio in, hit some push ups, sit-ups, lat dips, pull ups & burpees, then hydrate & fix breakfast.
- 2 hours Muay Thai training on the heavy bag, shower, get dressed.
- Eat, watch movies, research shìt that I care about & practice guitar & keyboard.
- Calm my fiancé down because she's a teacher & is super emotional that doesn't get to see her kids everyday lol.
- Eat, watch more movies & documentaries, then eventually fall asleep.
Birthday bourbon is one of my favorites. I got three bottles this year. Literally a **** show chasing it down. Unbelievable how difficult it is to get something good now.Drinking a lot of Old Forester 1910, Angels Envy Rye, and Elijah Craig all while exercising more through the day, homeschooling which sucks balls, daytrading, working from HOME, and practicing baby making.

Thanks Rell!Man, I missed this post. Sorry to hear pimp; but man, 93 yrs on this planet is awesome af. I’m sure my man saw and was able to impart a lot of wisdom to you & fam. He may not be physically here, but he’ll always be w/ u & the wife, bro. Condolences to you & your entire family.
Interesting Relly, I make grits all the time with baked fish and shrimp creole. I love Cajun food but I haven't actually made classic dishes, just my variations without heat cause the wife no-like. I love Gumbo too but again my wife doesn't like okra nor heat. Anyway my mouth actually watered by reading your post.Shrimp and grits is a ridiculous meal, and if I could kiss the person who created this on their forehead....I would. Not everyone can make it well. A lot of the ones I've had, they leave the veggies too crunchy. I let my onions, peppers, garlic, and bouillon sauteed for a cool minute in bacon fat. Fortunately, my dad is Creole and his side of the family is from Mississippi and Louisiana; so I'm just filled w/ Southern Cuisine from the Bayou in my repertoire.
Etouffe, Egg and Rice, and Shrimp and Grits are by far my most favorite to make. Gumbo, while I do love it......it's hella expensive and time consuming to make, if you make it the way you should. I gotta learn how to break up my days with Gumbo. To make the seafood stock, along w/ the perfect rue (dark chocolate brown), and to get all the moisture out of the okra w/ out frying it out.........head ache.

Thanks for the alternatives, you seem to be a great cook... the problem is that I love heat, so I indulge when I go to restaurants... also I love okra and slime too.... plus she doesn't like sausage either... she's actually a major pain when it comes to food, I tell her all the time and she agrees.Man, appreciate it. I don’t like Okra either, unless it’s battered and fried.
Here’s a dope way to make the Gumbo w Okra where ur wife won’t Boyce and lessen the heat:
take some fresh Okra; chop it down, THEN put in a food processor to grind it up. Take the grinds, and fry them over med low heat in olive oil for about 20-25 minutes consistently stirring. The result is the Okra will bleed out its slime, and b/c it’s been grounded up,when it thickens up the base, it’ll dissolve in the process.
To lessen the heat, don’t use crab boil. To get the flavor w/o the heat; create your own seafood stock from discarded shrimp shells, and homemade chicken stock from whatever source of chicken u use. Substitute the Louisiana sausage w a hickory smoked sausage.
As long as your rue is a dark chocolate brown, your flavor should be on point, even w/o the heat from the crab boil.
