How do these rosters get chosen? i.e. why is Bryant in this one when the other Florida kids weren't.

It depends on which game you get invited to/choose to play in. Example Duke was invited to both. Initially he committed to play in the Army game but later changed to the UA game because it was easier for his family to watch him play in that one.
