Which was the best team the Canes defeated:

1983 Nebraska
1985 Oklahoma
1986 Oklahoma
1987 Florida State
1987 Oklahoma
1989 Notre Dame
1992 Florida State

Others?

Not sure the best since I didn’t see many of these games but the 2000 FSU team was a good one

Miami lost to Florida State that year 27-24.

They also had about a 120 man roster with tons of "walk-ons", agreed here.
 
‘83 Nebraska and add in that we were heavy underdogs, just starting to become relevant, and had never won any championships.

Demarco Murray, Gerald McCoy, Trent Williams, Sam Bradford, Jermaine Gresham just off the top of my head.

I remember Bradford being hurt against us and Landry Jones played.

That team sucked, though. I remember us being all excited to beat them because they beat us by 100 the year before, but it wasn't a good team.

83 Nebraska is the boring but probably correct answer. The whole country was calling them the best team of all-time before Kenny Calhoun gave them the finger.

Honorable mention to 2000 FSU. They were on an insane run at that time, the 1999 team had gone 12-0 and won the national championship, and yes they did lose a stinker to OU to end that season in the national championship, but Richt had one foot out the door to UGA, Snoop Minnis was suspended, and FSU actually had more yards and first downs in that game. Besides the game against us and that game, they beat a ranked NC State on the road 58-14, they beat #10 Clemson 54-7, and they beat #4 UF 30-7. That team was smoking folks off the field. That team was really **** good. Weinke won the Heisman and Jamal Reynolds won the Lombardi......
