I saute with Olive Oil...but add a touch of butter....Only thing to fry with is Peanut Oil....In two of the Restaurants I oversee...The Olive Oil in the kitchen is fortified with Tarragon..Garlic...Rosemary..and..Basil (Fresh)
 
Canola Oil is good for Sauteing...but as far as Fish Frys...French Fries..etc...nothing touches Peanut....High Viscosity...but unfortunately pricey....Most restaurants use a blend thats more affordable...Bad thing is...cheaper the Oil...the more it needs to be changed...

Clarified Butter is a favorite of mine....no Milk fats mean Higher Viscosity...Put a nice crust on Piccatas...Marsalas (chicken or veal)

Have you seen Love Actually? When I'm not watching The Warriors, Scarface or Escape from New York for the zillionth time... I really enjoy that movie with a lovely on my couch next to me. It's perfect for you for movie night with Kenneth.

Lobster poached in clarified butter at low temp is so good it almost makes up for Mark Richt’s offensive performance.

I too have seen the warriors, scarface, and escape from NY a zillion times. Great taste!
