I don't know why you wouldn't want to begin the 2nd half with the ball if you win the toss. It's always better to have more guaranteed offensive drives/plays and thus more scoring opportunities in the 2nd half. And the further into the game you are the more you have an idea for how many points you will need. It's just kinda basic logic.

The only real statistical reason you'd want to start with the ball first is because in general the team that scores the first TD of the game has like a 2/3rds shot at winning the game. Though teams that get the 2nd drive of each half actually statistically have higher scoring and TD rates than the team opening with the ball. Apparently this is mostly because of field position. If you start with the game with the ball its from a kickoff. But if you get the ball 2nd, >40% of the time its going to be from a punt or turnover which is generally going to lead to better field position than a Kickoff. And better field position leads to higher scoring and TD rates.

Lastly you have the ability to "steal a posession" by controlling the end of the 1st half to end with a score, and then receiving the ball to open the 2nd half.

If you add that this is the opening game of the season against a rival at their home turf, it just makes even more sense that you'd want to start on defense.
 
I’d usually kick but I’d take the ball shove it down their throats have them go 3 and out we score again and all you’ll hear in the mighty swamp is the frogs croaking and the crickets chirping
