For variety and quality, I’d start in Italy, drive north to Austria, west to southern Germany and France then continue SW to Spain.

There’s soooo much more to Japanese cuisine than fish. Sushi restaurants are just what are popular in the states

Would love to try some day. There used to be a restaurant on Northlake called The Catch owned by a Colombian chef. They'd occasionally have a lionfish ceviche style appetizer that was fantastic.
Before my buddy’s divorce, we used to go way out in the gulf to GPS spots he had.
They would spearfish while I stayed on board fishing for snapper and grouper.
They would filet hogfish and lionfish immediately and put in a baggie with lemon juice and eat it raw on the way back to the marina.

I would watch with a mixture of horror and amazement.

You should have partaken. Lionfish is delicious. He served it with citrus marinade, dragon fruit, and English cucumber. It was almost a disappointment when they didn't have lionfish and used wahoo.

Trust me Brother, I wish I liked fish.
Loved it as a kid, but my stepmother ruined me for life with the awful ways she cooked fish.
Can’t even handle the smell now.

I’ve had fish twice in 40 years. A Mahi I caught off Jupiter that we cubed, breaded and fried and some trout we caught on a trot line on some German trout farms in the woods and grilled in foil with butter and lemon.
