If not, the menu is rather limited.

For variety and quality, I’d start in Italy, drive north to Austria, west to southern Germany and France then continue SW to Spain.

There’s soooo much more to Japanese cuisine than fish. Sushi restaurants are just what are popular in the states

I get that, but a large portion of Japanese cuisine is fish. Not knocking it, just as an anti-pescetarian, it’s not for me.
There is a reason the Japanese are so healthy.
