Dude! Chicago’s Deep Dish is a novelty pizza for tourist! The everyday pizza that is ate is the infamous thin crust, tavern style! & it’s delicious got dammit
tavern pizza is the best. ive actually had better deep dish outside of chicago than in chicago (there is a spot in SF that is infinitely better than anything ive had in Chicago).

Next time I make a deep dish from scratch, imma post it. I make everything from scratch including the dough, sausage, & sauce (pause). Won’t or dont even need to buy one again; I make it for when family come in to town from the Midwest.

Love Pat’s; absolutely top notch. Always consistent.

My top spots are Pat’s, Bonci, & Lou Malnati’s. Giordanos will always hold a special place in my heart as it was the 1st Chicago Pizzeria I’ve ever been to, but b/c of their popularity & commercialism, imo they’ve kinda fallen off.

But, seriously, I make a mean Deep Dish. There’s a couple of tweaks I use for the crust so it’s flavorful all the way through, & I also created this butter bath that marries perfectly w/ the pizza sauce as it bakes.

Deep dish isn’t pizza, it’s meat and cheese soup in a bread bowl

I like the double decker pies - 2 tavern styles stacked up with a crust that holds them together. There's a spot here in Orlando called Brad's Underground and he makes a nice one

I’ve not tried the double decker, but now that’s immediately on the bucket list.

There’s also a pizza from Chicago that’s confused w/ the deep dish which is Chicago’s Stuffed Crust.

I’m going to take on the ambitious task to try recreate both the tavern style & the stuffed crust. I need new baking tools for both.

Pequods is the very first place I visit for a Cubs or Bears game. My son is addicted to it and dreams about it.
