If the QB's riding the belly of the RB, would it be legal for the defender that's being RPO'd to hit/tackle the intended receiver?...sorta like the DTs tackle the FB in the Triple Option whether He has the ball or not.

Contact is allowed until the ball is in the air. However, tackling a receiver could be considered defensive holding.

Would you even have that much time to react to tackle the WR? It can't be that long that the QB rides the RB. Seems like its more about if they bite for a split second giving a WR enough room for an easy pass or they don't bite and they clear out with the WR and the RB has less people in the box to avoid and be blocked.

This rule goes with any play, you can hold(jam/press) the receiver within the first two yards of the LOS for as long as you want. That doesn't' change in RPO or the run. From a defensive player's perspective, it wouldn't be particularly smart to just tackle the WR, which you technically could (pending with group of zebras you get), if you whiff then that's an easy first down or even a TD.

Only thing that changes is you can probably get away with hitting the QB when he hands if off. Depends on the refs though and the intensity of the hit.

Also important to note "riding the belly of the RB" shouldn't be more than an instant of reading the hanging defender.

Ahhhhhh, good one. That's what happened to Kaaya when He got His tooth knocked out vs FSU, except He threw it.

The defender that's being RPO'd? Like, the conflict defender?

If he tackles the WR then the you're losing a run defender and the QB just hands the ball off. You'd be doing the offense a favor.
