Sear and then turn down the heat.

I have achieved great results with this marvelous method!

Medium well

I don't care which side the cook errs as long as it's not any semblance of red and squishy.

In France I sent it back three times to be cooked some more and eventually the chef came out to confront me. Major howl. I can still picture the expression on his face, especially as I responded with laughter.
