Same w/ me. Always medium rare; hit 36, and I had a bad incident from it, now it’s strictly medium. Not sure if it was the steak itself or how it was prepared, but have a mental block regardless. Honestly, u were safe as long as u didn’t say well done. ****, u could’ve said blue, and that would’ve been acceptable. Lol
I'm strictly medium as well. I will do medium rare at specific high end restaurants i can trust but i had a bad experience once with it practically being blue inside and decided that was it.
I do some sous vide cooking at home. Those i can make medium rare with a quick sear for perfection.
