Personally, I sous vide beef at 118, then sear on a soapstone heated to 500, but a cast iron pan over medium high would be plan B.

Try making an au poivre sauce to serve with it. Very simple and well worth the minimal effort.

A large subset of the millennial generation. Poorly raised to value feelings over logic; and led to believe they were 'special and unique'. They grew up wearing bicycle helmets, collecting participation trophies and valuing fairness over hard work. The 'melt'-down of 2016 was their official coming out party.
