As others have mentioned, the style of the offense matters.
Hurts would absolutely not be a fit in a traditional pro style offense where the QB is tasked with sitting in the pocket and completing throws into tight windows. Hurts would be a fit in a more wide open, spread offense where QB runs are a deliberate part of the scheme.
Applewhite's offense would presumably draw from the Tom Herman and Briles offenses. Both of those offenses make heavy use of running QB's as the way to loosen up defenses and create more open (easier) throwing opportunities, as well as provide an additional running threat thereby opening the run offense.
I think Hurts could be a good fit in what I expect a Major Applewhite offense will look like.
