Met Kaaya's Mom tailgating...Super Cool to talk to....Most of the convo was about food...and she most certainly is Vegan...When she found out I was a Chef, she asked about different dishes for Vegans, I actually pointed her to my Nephew who's a Vegan Chef in Boca...

What’s ur speciality?

Before I got in to the insurance business, my first love was cooking. Was going to go to culinary art school w my homegirl, but took a different path. I used to regret it, but my homegirl got so stressed working at this restaurant in SF, she literally almost died. She was like it’s not all glitz and glam like these reality TV shows b trying to make it seem.

I think cooking must be incredibly stressful and demanding.

I'm classically trained in several cuisines Rell...But Italian without a doubt is my specialty...Mom was born in Italy so I had an early start in regards to Rustic Italian...

OP, as I’ve stated many times on this board, prior to Richt & Richt, Kaaya was projected to go no later than the 2nd round. After Richt, he barely got drafted. They are horrible, no lie.
Right. He was a can’t fail nfl qb groomed by Alfraud Gluten. Right until Richt got him.

it's not the cooking itself that is the problem

it's the keeping up with the orders

I've worked at several places, your own co-workers are your worst enemies. I wanted to kick everyone out of the kitchen and just let me handle everything 1 order at a time countless times. Seriously.. just leave dudes, all of you just get the fck out of here go sniff glue out back since that's what you apparently do before you come in here every day and just let me handle every thing

front of the house staff are generally fck'ing entitled morons as well, I can write books about those dip****s

Imagine overseeing 6, soon to be 7 Multi Million dollar Restaurants (back of the house) with 6 Head Chefs, 12 Sous Chefs, and over 30 Linecooks and Pantry Cooks??....Stress??...Lol....

She's 100% correct....F all that Guy Fieri...Bobby Flay crap you see on TV.. As far as Culinary School..It's not imperative, I went because I recieved a Pell Grant in 79...But its certainly not a must..Some of Americas Best Chefs aren't Culinary Grads...I have Chef friends across Fl and the country who Literally wipe their azzes with the likes of Emerill...Flay...etc....it doesn't hurt to have a Culinary Degree, but its not Mandatory.
