I smoke em at 250° until they get the color I want then put them in a pan with brown sugar, butter, honey, a little bit of Sweet Baby Ray's and cover in foil, then throw them back in for a couple more hours.

I actually drain most of it then let it cook uncovered for about 15 mins at the end. It ends up making a real sticky glaze.

I got a Pit Boss myself. Haven’t tackled a brisket yet, but have smoked pretty much every thing else.

Smoking a brisket is like doing heroin, your first brisket will be your best one and you’ll spend the rest of your life trying to make one that good again.

@Baba Yaga can attest to this.

Yeah I like Malcom reed, but not for everything. I did do the jelly, I usually do strawberry jelly and it’s awesome

Nope. You wouldn’t be able to tell the difference in a taste test. No fuel taste because it’s simply just wood, just be willing to spend a bit on good quality pellets.
