In regards to Braciole....it was originated in Italy by peasants who couldn't afford expensive cuts of meat. So they took the cheap, but flavorful tough cuts, pounded them out, then stuffed, browned and braised.

I absolutely love Braised meats. And there's nothing I love more than Braciole....but I like it my way.
